The best invention to meals is having breakfast for dinner. Eggs, pancakes, toast, anything of the breakfast genre ultimately becomes a hundred times better when you eat it for dinner. So one night last week I couldn’t figure out what to make for dinner. Until I was browsing my Pinterest (an amazing creation) and came upon this fried egg, tomato and arugula sandwich on a grilled baguette. It was not only relatively healthy but I added some melted brie to the bread and a sprinkle of parmesan cheese on top to add a salty bite to the overall entree and it was fabulous. Definitely a weekly stable to my dinner routines now.
